Mexico has over 10,000km of coast line across 17 different states. On reaching the tranquil shores of Chiapas... the hectic yet awesome capital city, Mexico DF, with almost 20 million inhabitants, will be a distant memory.

Chiapas grows bananas, mangos, papaya and also much of Mexico's organically grown coffee; the altitude of the highlands provides the best conditions for cultivating the highest quality Arabica coffee beans. Like wine, coffee has defining characteristics that are determined by the source and quality of the beans.
Sound: The helicopter roars as it comes in to land. The ensuing silence is broken only by birdsong emanating from the forest.
Motion: The helicopter swoops in overhead and gently drops in to land.
You may be surprised to see coffee growing here but for centuries indigeneous communities have made the most of the rainforest; its shade and ecosystem slow down the ripening of the coffee cherries and give the Arabica beans inside a unique intensity of flavour. The red, ripe coffee cherries are carefully hand-picked and hulled. The beans are washed and dried and only then are they ready for roasting.
Sound: The birdsong crescendos as the journey penetrates further into the jungle.
Motion: A trail of ants snakes up a fallen log. A toucan pokes its head out from within a hole in the log.
Look out for the odd hole in a tree trunk. It may not be to everyone's taste but to a toucan it's home.

Motion: A toucan flies by under the forest canopy.
As you enter the lush Mexican rainforest you can feel the velvet humidity closing around you. The sunlight is left high above the forest canopy.
Sound: Birdsong and the sound of flowing water from the river.
Motion: The toucan swoops down to land on the boat by the donkey.
Mexico is the fifth biggest producer of coffee in the world and most of its coffee, grown across 12 Mexican states is carefully handpicked and then transported to cooperatives or farms where it's washed and dried, in preparation for roasting.
Sound: Birdsong and the sound of a boat being paddled along the river.
Motion: The boat is rowed up the river, arriving at a store of coffee on the waters edge.
"Café de olla" is often drunk in rural Mexico - a strong black coffee, with sugar cane and cinnamon; it's one to try. But you can't beat the taste of a Mexican rainforest award-winning, organic coffee; an effusive array of delicate flavours abound in this mild yet fragrant coffee. Floral and honey notes combined with undertones of dried fruits and fig may be detected in the finish.
Sound: The sound of a harbour, with seagulls, waves lapping against the side of the mored boats and a foghorn blaring in the background.
Motion: The toucan swoops by again, landing on some coffee bags on the harbourside of a dock. A crane is lowered down from above, causing the toucan to take off from its perch.
